Kale Greens & Sausage Soup
- 1-2 medium-sized smoked sausage
- 1-2 large bunches of kale greens
- 2-3 teaspoons of salt
- 1-2 teaspoons of greens seasoning
- 2-3 sections of garlic
- 1 can of Campbell's Chicken Stock
- Optional:
- Colby Cheese Slices
- Tabasco Sauce
Take 1 or 2 smoked sausage links, then slice them into bite-sized (spoon-sized) pieces, and place them in a large pot. Dice, slice, or chop 3 to 4 pieces of garlic. Let the garlic and sausage boil together on low to medium heat for approximately 3-5 minutes.
While this is happening, separate the leaves of the kale greens, and rinse each leaf individually under cold running water. Then soak the leaves in a bowl of cold salt water as an additional cleaning technique.
After the cleaning, slice the kale greens into thin strips or simply remove the hard stems from the kale and tear the leaves into bite-size pieces into the mixture.
Add to the garlic and sausage mixture, the can of Campbell's Chicken Stock, (and don’t forget to fill the can with water and add that to the mixture), and then bring the whole mixture to a boil.
Add the greens seasoning and the salt, and let the whole mixture boil for 5-10 minutes.
I like to add a slice of cheese and/or hot sauce on top of each bowl - maybe a slice of Colby and a little bit of Tabasco.
